Pan-Seared Lamb Chops with a Barbera Reduction Sauce
We love lamb. Whether it is just part of our Georgian culture or it is because the meat is amazingly tender and juicy, we love lamb and it is a staple of our dinner table. Although we have dozens or recipes, which we will share in time don’t fret, we are imparting to you our pan-seared lamb chop recipe which is served together with our red wine reduction sauce. We are cooking with another red wine, the 2011 Eristavi Barbera which, in the recent months, has blossomed and began to mature into an exquisite and addictive wine. The low-tannic structure of the Barbera and its inherent notes of dried fruits and cherry compliment the tart and savory balsamic and garlic marinade of the lamb creating a unique and flavorful experience perfect for any dinner party or date night where you want to impress with little fuss.

Ingredients:
For the Lamb Chops:
- 1 tbsp olive oil
- 1-2 tsp balsamic vinegar
- 2 tsp fresh garlic, minced
- 2 tsp fresh cilantro, minced
- 4 lamb rib chops
For the Barbera Reduction Sauce
- Olive oil, for coating the pan
- 1/4 cup shallots, minced
- 1/2 cup 2011 Eristavi Barbera
- 1/2 cup beef stock
- 2 tablespoons butter
- 1 tablespoon cilantro chopped
Preparation:
In a bowl, mix together the olive oil, balsamic vinegar, garlic and cilantro. Season the lamb chops lightly with salt and pepper. Rub the chops with the olive oil mixture and set aside to marinate, for 15-30 minutes.
While the lamb marinates, begin the Barbera reduction. In a saute pan, over medium high heat, add enough olive oil to coat the pan.Add the shallots and cook until translucent. Then, add the red wine and the beef stock and reduce by half. Once the juices reduce, add the butter and chopped cilantro.
While working on the Barbera sauce and after the lamb chops have marinated, heat a skillet over medium heat. When the skillet is hot, add the chops to the skillet and cook to desired doneness, about 3-4 minutes per side for medium-rare. Serve warm alongside some roasted vegetables.
Once you begin plating your delicious lamb chops, take your pan of Barbera reduction and spoon the sauce over your gorgeous meal. Be as frugal or as generous as you desire. We tend to lean towards saucier servings.
